We try to use DOP Products wherever possible. DOP stands for “Denominazione di Origine Protetta” in Italian, which translates to “Protected Designation of Origin” in English. It’s a European Union designation that ensures products are made, processed, and prepared in a specific geographic area using traditional methods and meeting strict quality standards. 

Under the DOP designation, various products can be protected, including:

  • Cheeses: Parmigiano Reggiano, Grana Padano, Gorgonzola, Mozzarella di Bufala Campana, etc.
  • Meats: Prosciutto di Parma, Prosciutto di San Daniele, Salame Felino, etc.
  • Olive Oils: Extra Virgin Olive Oil from specific regions like Tuscany or Umbria.

7. PASTA MANTECATA : FRESH HOMEMADE AND PREMIUM DRY WHOLE WHEAT ORGANIC PASTA

Mantecatura is a finishing process carried out at the end of cooking , For a perfect mantecatura, it is important to drain the pasta 3-4 minutes before aldente , adding sauce and starchy cooking water from boiling of pasta , allowing all the ingredients to naturally  bind together unlocking the secrets of Donatella’s Italian Kitchen. . We use this the method for most of our gnocchi’s , risotto’s and other dishes “
